Default Cara Dan Resep Membuat Coto Makassar

Coto Makassar merupakan menu favorite yang diburu wisatawan jika sedang melancong ke Makassar.

Bahan-bahan

1 kg daging sapi + jeroan
2000 ml air tajin (air cucian beras ketiga)
120 gr kacang tanah disangrai
3 lembar daun jeruk
3 lembar daun salam
2 ruas lengkuas digeprek
2 batang sereh digeprek
1 sdt merica bubuk
1/2 sdt ketumbar bubuk
Minyak untuk menumis
Bumbu halus:
7 bawang merah
5 bawang putih
5 kemiri
1/2 pala
Garam
Bahan pelengkap :
Daun seledri potong2
Daun bawang potong2
Bawang goreng
Ketupat
Sambel
Jeruk nipis.

1. Rebus daging dengan air tajin, lengkuas, sereh, daun salam dan daun jeruk.
2. Goreng kacang tanah dan haluskan.
3. Setelah daging setengah matang, angkat dan tiriskan (Air rebusan daging jangan dibuang). Daging lalu dipotong dadu. Jika air rebusan terdapat gumpalan lemak, gumpalan lemak tersebut dibuang agar air kaldu terlihat bersih dari busa atau gumpalan lemak.
4. Tumis bumbu halus hingga harum. Setelah itu masukkan ke dalam air kaldu bersama dengan daging dan kacang. Lalu masak hingga matang. Tambahkan merica, ketumbar dan garam. Koreksi rasa.
